1 1/2 pound extra lean ground beef (or ground chicken)

1/2 cup crushed cracker crumbs and/or rolled oats

2-3 tbsps Ground Flax Seed Meal

1/4 tsp cayenne pepper

1/4 teaspoon Sea Salt unprocessed

Be creative:    try...   Seasonings like,
Summer Sage
Rosemary
Dried or Fresh Parsley
Basil.
and lots of fresh minced Garlic
I've even added some grated carrots (for the kids of coarse)

Mix & spoon into hands to form into uniform balls

Place on oven drip grill pan and bake till done...1/2 hour @ 350'


    While they are baking  .  .  .     Have a little glass of wine,    Relax .



Mix in large sauce pan :

1 cup catsup

1 cup brown sugar ....     ( Stevia)

1 cup (scant cup) vinegar (I like to use apple cider vinegar)

Let this simmer, uncovered, while the meat balls are baking.

When done, spoon meatballs onto paper towels to absorb the fats

then spoon into the sauce and continue simmering till your company arrives.


For a dinner, add rice and steamed vegies.
For a pot luck, deliver in a hot covered casserole dish.

For an appy or smorgasbord, place in slow cooker and serve with tooth picks

(I try to make them bite size if I am using them as an appy.)

These tasty meatballs are a great life saver at Christmas,
Have some ready in the freezer, when the unexpected company arrives
quickly put on a pot of sauce and add the frozen meatballs.....

They will be so impressed !     Add a tray of raw vegies and enjoy!
