Preheat oven ~ 320'F
1 Cup dates cubed ( 1/3 of a 500g pkg )
1 T Baking Soda
1 Cup Sugar or Stevia equivalent
1 Cup Boiling Water
1 Egg
1 T Butter
1 Cup grated carrots
1 1/4 Cups Flour ( see notes below )
1/2 Cup Flax Seed Meal
1 t salt (sea salt)
Place cubed dates in bowl, add soda, butter, salt and Sugar,
pour boiling water on top, mix a little.
set aside to cool. then after they have cooled lightly beat in egg.
add Carrots
add flour
Into greased & dusted loaf pan.
1 hour @ 320'
Some variations are
Dried Apricots, Currants, Cranberries,
Candied Ginger. Coconut & Chocolate
Very simple & fast and absolutely delicious

Rice Flour & Brown Rice Flour, Corn, Ameranth, etc.
